Peppers Silo Hotel is an inspiring $30 million redevelopment of the Kings Wharf grain silos in Launceston, Tasmania. The nine storey hotel consists of 108 rooms, including 52 in the barrels of the former silos, and overlooks the nearby tourist drawcards of Seaport, Royal Park, the Tamar River Basin and Cataract Gorge. A vibrant level 1 houses an 80 seat restaurant, café, cocktail bar, lounge and a number of meeting rooms. Recently awarded one of the best regional city in Australia, designated a UNESCO Creative City of Gastronomy, Launceston has a lot to offer.
We have an opportunity for an energetic and passionate experienced Restaurant Manager to join our award winning Grain of the Silos restaurant’s team.
Reporting to our Food and Beverage Manager, you will..
Be responsible for managing our restaurant Grain of the Silos with a commitment to evenings to make our dinner service shine. Working with hyper local producers is fundamental to the food philosophy at Grain of the Silos. The quality of the produce in Northern Tasmania is some of the best in the country and for our food director, Massimo Mele, having access to these exceptional ingredients is the ultimate luxury. Local produce is at the heart of every dish on our menu and Massimo, together with our executive chef, Thomas Pirker, and head chef Mika Chae, work collaboratively with our local food community to showcase the best ingredients from across the state, support the farmers, growers, and makers of the region whilst we delight in sharing big flavours and experiences. We are committed to keeping our footprint on this planet small. We implement waste management practises throughout our operating procedures; we are working to eliminate single use plastics and cardboard across every facet of our hospitality offer. We aim that the experience at Grain of the Silos delights our guests senses and ignites them curiosity for our little corner of the world.
You will be responsible for the efficient operation of our restaurant where you will use your people skills to motivate and manage your team, work collaboratively with other departments, and deliver an outstanding dining experience to our guests. We have a large team, so your passion for people, their development, training, and delivery of efficient, guests focused service will be paramount. Grain of the Silos restaurant produce is carefully selected, and we have created very close relationships with our producers which we now call family. This amazes our guests, and you will be able communicate to them and your team incredible and thoughtful stories. Your wine knowledge will not only impress our guests, but will inspire your team to deliver consistent storytelling of our wine selection and Tasmanian vineyards.
To be successful you will..
You will hold a current TAS RSA, be a strong team player and have a min of 2 years' experience in a similar role. Fine dining/ A la carte experience essential including exceptional service skills and knowledge. Strong organisational skills with a clear focus on quality and service standards. Excellent communication skills (both written and verbal). Strong leadership, training and staff management skills. Outstanding food and wine knowledge. Financial acumen across budgeting, revenue and costing. High standard of grooming and presentation. Ability to work under pressure and juggle multiple tasks. Ability and flexibility to work various rostered shifts, including early mornings, late evenings and weekends.
