Cé LA VI operations.
DUTIES AND RESPONSIBILITIES:

General
- Maintain all of Cé LA VI high standards.
- Above all to lead by example through a “hands on” approach to motivate our service staff to excel.
- Be an aggressive Team player and always have a “Can Do Attitude”.
- To ensure that the pour cost is not over 25%
- Held fully responsible for the implementation of all Pour Cost reduction policies
Profitability
- To maintain the bars profits through increased revenue and the minimizing of costs.
- To be responsible for the Clubs controllable and their control in relation to sales revenue.
- To be aware of all incentive programmers and the correct accounting procedures pertaining to them, especially those pertaining to credit card discounts and Membership Sales. To be responsible for all accounting and billing procedures in all clubs.
Stock Control
- To assist Shipping and Receiving with the upkeep and rotation of spirits and deleting spirits that is not selling well. Additionally, the Bar Manager will be held responsible for knowing new items on the market and can help suggest whether or not we should carry them.
- Responsible for ensuring that we are maintaining the right price points for all products offered in the clubs.
- Responsible for all aspects of pour cost control.
Standards
- Responsible for responding aggressively to any demerits on safety reports. The club staff will be held accountable for poor reports.
- To be responsible for maintaining safety and hygiene in the clubs.
- To enforce operating standards, use records and to change, update and improve on a regular basis.
- To hold responsibility for the time sheets and required reports.
- To hold responsibility for the monthly scheduling, days off and individual scheduling of stations in the clubs.
- To ensure efficient management and supervisory scheduling.
- To represent the clubs for all day to day operational needs.
- To oversee the Club Supervisors & Assistant Club Manager with the training of the Club Service and Floor Staff.
- To coordinate and oversee new cocktail tasting sessions with the Bar Supervisors& Assistant Bar Managers
- To hold responsibility with changes in drinks items as needed POS changes, and drink menu changes.
- To develop plans and actions on a quarterly basis for the clubs and to follow up.
- To help develop supervisor training plans on a quarterly basis in conjunction with personnel and to follow up.
- To be responsible for the execution of all associate reviews and appraisals in a professional and timely manner.
To train associates, supervise, coach and counsel
- Open and close shifts in accordance with the Manager’s Checklist.
- Promote interdepartmental relations through candid communication channels.
- To respond to guest enquiries or concerns within 24 hours in what is deemed the appropriate manner (i.e. telephone call, letter, etc.)
- Attend all meetings as needed (TBD)
- To improving standards and service for our guests.
- To work in conjunction with the event team.
- To hold responsibility with the selecting of new staff and their training.
- To hold responsibility for disciplinary action, as well as the rewards for outstanding performance.
- To hold responsibility for the punctuality of the entire team.
- To hold responsibility to create a good working atmosphere and build a team in order to increase morale and efficiency.
- To hold responsibility for the performance appraisals for the club staff.
- To hold the responsibility to co-ordinate and implement training

- To work in conjunction with the event and creative teams.
- To co-ordinate the work of subordinates and maintain the established procedures and policies.
- To oversee any drink menu changes.
- To converse with guests to maintain a good relationship as well as extending a personal touch.
- Make proper recommendations to the General Manager about any necessary improvements in the club.
- Make sure that the daily log book for the bars are full and complete.
- Ensure that that clubs are properly staffed.
- Ensure that stock is requested for special events and special parties; oversee the club Supervisors and Assistant Club Managers for the recording of stock & requests for special events.
- Ensure that the Cé LA VI Cocktail Recipe Manual is updated, correct, and frequently tested upon.
- Ensure that the bar is complete with music and visuals prior to opening.
- At any time you might be required to help assist with another Cé LA VI property.
