  1. 同各部门经理及厨师长协商制作菜单。其中包括:

  • 准备菜单、客人数量、受大众欢迎的市场、最新的菜单、宗教及其他节假日。

  • 当有宴会或其他特殊活动时同宴会厅经理共同协商菜单。并定价。

     

  • 安排菜单的印刷并复印一份放在厨房显著的位置同时分发各厨房每人一份。

  1. 决定食品的供应商及设备。

  2. 必要时审批食品供求表。

  3. 检查收货食品的质量。

  4. 根据酒店的标准监督所有的烹饪。

  • 检查食品的准备及烹饪

  • 检查部分食品的规格

     

    生产特殊的食品及有创造性的配料。

  1. 同总管事共同监测确保所有厨房设备的卫生及所有设备的正常运作。

     

     

  2. 同餐饮服务经理、餐厅经理、宴会厅经理协商每天面临的特殊需求:特殊自助餐台搭设、重要客人需求及其他运作部门需求设备。

     

  3. 同工程总监沟通有关所有厨房每天的设备维修。

     

  4. 同宴会厅经理协商有关特殊宴会,必须在保证成本预算的基础上给客人提供高标准的食品。

     

  5. 确保每天按照喜来登的标准配料卡准备及烹饪食品。

     

  6. 保持产品外观及卖相一贯及经常修订。

  7. 每天检查自助餐厅的食品。

  8.  餐加宴会厅会议,了解近期宴会。

  9. 参加每周餐饮部会议并报告厨房的运作。

  10. 参加每周的部门主管会议。

  11. 监测每周食品成本并作出适当调整。

  12. 每月同餐饮部总监共同检查卫生标准并提出需改正意见。

     

  13. 注意每月的慢移动食品并采取相应措施使用其食品。逐渐在慢移动清单中清除。

  14. 安排员工休息时间表,确保员工休假不影响运作。

     

  15. 员工变动及确认需得到餐饮总监批准。

     

  16. 为特殊宴会制定菜单。

  17. 持续不断的按照标准出食品及自助餐,同各厨师长讨论如何更换菜单。

What you’ll be doing

 

  • Prepare fresh ingredients for cooking according to recipes/menu
  • Cook food and prepare top-quality menu items in a timely manner
  • Test foods to ensure proper preparation and temperature
  • Operate kitchen equipment safely and responsibly
  • Ensure the proper sanitation and cleanliness of surfaces and storage containers

 

What we’re looking for

 

  • Great teamwork skills and attention to detail
  • Positive outlook and outgoing personality
  • Previous kitchen experience is a big plus

 

This role requires the ability to move and lift up to 25 lbs. Standing, sitting or walking for extended periods of time and ensuring a professional appearance in a clean uniform are also required. Prior to employment, we’ll ask you to complete safety training and certification.
