Bicicletta Restaurant is located within iconic Peppers Gallery Hotel & New Acton Precinct, and is a favourite amongst Canberran’s for its authentic Italian Cuisine. Our recipe for success remains grounded in a commitment to seasonal produce, provincial dishes, family and community.
We are currently seeking an ambitious Head Chef to lead our busy operatiing and and mentor our established kitchen brigade
About You
- You will be an established Sous Chef ready for the next challenge or an up and cominghead chef wanting to showcase your culinary dexterity in a new establishment
- You are passionate, hands on and committed to delivering an immacutlate guest experience.
- Meticulous attention to detail with food presentation and consistent deliver
- You are a quick thinker who understands the importance fostering a supportive culture of high achieving Chefs.
- Possess a Certificate III in Commercial Cookery (or equivalent) as well as Safe Food Handling Certificate or Food Safety Supervisor qualifications
- Background in Italian cuisine and experience with pizza ovens and dough making will be highly regarded
- Financial acumen relating to rostering and wage costing
- Understanding of the Canberra dining environment and trends
- Unlimited Australian work rights with the ability to work a varied roster including weekends, public holidays, mornings and evenings.
- Flexible availability across a 7 day a week operation
The Role
- Menu engineering and costing
- Support and develop promotional activities within the business
- Ensure the Kitchen team operates efficiently whilst providing dishes of the highest quality every service period
- Motivate, support and develop Chefs of a lower classification as well as the wider kitchen team
- Ensure compliance with food safety, hygiene and workplace health and safety legislation and regulation
- Actively participate in personnel management, recruitment and performance reviews
- Implement strategies to minimise waste and optimise usage of produce
- Oversee food safety, HACCAP, WH&S and sanitation in the kitchen
